Organic Beetroot & Black Bean Burgers

PREP TIME: 1 HOUR // SERVES: 10

What You'll Need

  • 1 onion, roughly chopped
  • 2 cloves garlic
  • 1 pack Organic Love Beets
  • 1 can black beans, drained
  • 2 carrots, grated
  • 1 cup brown rice, cooked
  • 1 1/3 cup almond meal
  • ½ cup parsley
  • 1 tbsp paprika
  • 1 tsp cumin
  • 1 tsp coriander powder
  • Salt and pepper
  • 2 Lebanese cucumbers, thinly sliced
  • 2 avocados, scooped from skin and thinly sliced
  • 3 tbsp Tahini dressing
  • 6 tbsp water
  • 300g organic spinach
  • 10 wholemeal bread rolls
  • Substitute all ingredients for organic alternatives for a wholesome organic meal!

What to Do

  1. Preheat oven to 180°C and line two baking trays with baking paper.
  2. Place onion, garlic, Organic Love Beets and black beans in a food processor. Process on high until just combined, but not smooth. Pour mixture into a bowl and then mix in carrot, brown rice, 1 cup of almond meal, parsley and seasonings.
  3. The mixture will be quite wet. Form two tablespoons of mixture into the shape of a patty a place on the lined baking tray. Repeat with remaining mixture. Sprinkle patties with the remaining almond meal then bake in the oven for 30 minutes. Allow to cool for 5-10 minutes before removing from the tray.
  4. To assemble, mix together tahini and water until smooth and spread on the wholemeal bun. Layer the pattie with cucumber, avocado and organic spinach.
